Today is the day when every Indian, near or far from the mother country feels proud to belong to this holy land. India is a place where great men and women were born giving this nation a special identity on world map. Many regard this country as civilization of enlightened and spiritual humans. For centuries, India has been an interesting observation for countries around the globe.

I can go on and on praising my motherland, but today am not here for that. Today I just have one simple message for every Indian. That is, we are blessed to live in a land that yields some of the best nutritious crops in the world. Our water sources that many of us worship are rich and fertile. Let’s just take care of them wholeheartedly and avoid their degradation in every possible way.

Indian food is renowned internationally for it’s diverseness and goodness. 30% of Indian population is vegetarian and that is a lot. Today we need vegetarianism more than ever. Many problems related to health and climate change can be solved by simply eating more plant-based diet. We are a great nation but we can continue to be a great nation only if we are healthy enough to run it’s economy efficiently.

So here I am wishing all my Indian friends a very Happy and a Healthy Independence Day. Enjoy your freedom to the fullest but not at the cost of others safety or happiness. VANDE MAATRAM!!

Serve raw carrots and cucumbers in this beautiful Tricolor pattern to celebrate India's Independence Day. For Chakra in the center, I have used Blueberries.

On side I have filled glasses with grapes and peaches chopped in cubes giving another Tricolor effect.

You can enjoy these fresh veggies and fruits as it is or along with Hummus or any choice of dip.

I love cooking healthy food that not only nourishes the mind and body, but soul too. Give the gift of both, health and taste to yourself and your loved ones.
